Hours of training and painstaking preparation have paid off for Team Australia at the Asian Pastry Cup in Singapore this April, securing third place and a berth at the Coupe du Monde (World Cup) de la Patisserie in France next year.
Patisserie Lecturer Justin Williams and Sydney Pastry Chef Sonia Quek finished just behind the Malaysian and Singapore teams, who placed first and second respectively. The pair created 20 desserts, two entremets (modern gateaux) and a complex sugar and chocolate showpiece – all of which were space-inspired – within eight hours. Speaking from Singapore, Justin and Sonia said they were “excited and honoured to represent our country in the best pastry competition in the world”. “But we know that the road to France will be hard,”.
The Coupe du Monde, which will be held in Lyon, France in January 2019, is held every two years and is touted as the biggest and most prestigious competition of its type for the international pastry industry.

The space themed display base incorporated spot lighting, glowing crystals, a spectacular light show and a smoke machine, we look forward to helping the team represent Australia in France in 2019.
